This is one of my daughters favourite dinners, full of vegetables and protein and the added fun with spaghetti this is a winner with the family every time. It is very tempting to buy a ready made bolognese sauce but where is the fun in that when it is healthier to prepare your own.
Here is my quick and easy recipe that you can adjust as you can add any vegetables that you like just remember the trick is to cut the veggies into small chunks to create a tasty bolognese sauce.
INGREDIENTS
(4 People)
2 tbsp Olive Oil
500grams 5% Fat Mince Beef
1 Garlic clove, finely sliced and chopped
1 Red Onion, chopped small
1 Courgettes, chopped small
1 Bell Pepper, chopped small
1 Carrot, chopped small
500grams Italian Tomato Passata
1 heaped tbsp tomato purée
5 fresh Basil Leaves
Salt & Pepper to taste
1 Chicken Stock Cube
1 packet of quick cook Spaghetti
METHOD
In a saucepan add the olive oil and place on a medium, lightly fry the garlic and onions until soft and then add the carrots and cook for a couple of minutes then add both the courgette and the pepper and mix together, cook until soft
Add the mince and cook until, stirring frequently and season with a little salt and pepper
Add the passata and tomato purée and simmer for 15 minutes or until the sauce is creamy
Meanwhile, add the spaghetti to some boiling water and follow the packet cooking guidelines or until the spaghetti is cooked to your liking
To serve, either add the spaghetti to the sauce and mix together or on a plate layer the spaghetti on first and add the bolognese on top, add some yummy grated parmesan cheese and enjoy!
