Chicken & Pepper Pasta Recipe


Sometimes it can be hard to eat healthy but one thing I always say is just to mix what healthy food you love together. This meal was literally thrown together for a quick and tasty dinner for me and the family and the ingredients are so simple and a healthy choice for a healthy meal...

This chicken and pepper pasta recipe is a good recipe for prepping and great reheated for lunch the next day (I usually do this for Hubby for his lunch the next day).  Here is my recipe for this quick and yummy dinner...

INGREDIENTS

(2-3 people)


Olive oil
2 skinless breast Chicken, chopped 
1 large onion, chopped
1 garlic clove, chopped 
1 red bell pepper, sliced and chopped
1 fresh green chilli, deseeded and sliced
Cajun spice powder
Lucybee himalayan pink salt, to taste
Black pepper, to taste

200grams Pasta of choice, 100gram per person 

METHOD


Prepare the vegetables and add the olive oil to a saucepan on a medium heat.


In a medium pan boil some water with a little salt for the pasta. 



Chop the chicken into thick slices and marinate with the Cajun spice about half a teaspoon and leave to one side until garlic and onions are soft and slightly golden. 



Once the water is boiling add the pasta and simmer until pasta is cooked to packet instructions. 



Add the garlic and onion and fry in the olive oil until soft and slightly golden, then add the fresh chilli.


Add the marinated chicken to the pan and fry until chicken is cooked through then add the peppers and fry for a further 5 minutes until peppers become soft. Season with salt and pepper to taste if required.



In a separate saucepan add the pasta, chicken and vegetables and stir together until combined. 


To serve top with your favourite cheese (its always mild cheddar in my house) and serve hot.
