Parsley Chicken Pasta


Want something healthy and easy to cook in 15 Minutes? Here is my recipe for this delicious Parsley Chicken & Pasta, perfect for those summer lunches or light dinners. 


Ingredients 
(Serves 1) 

1 Breast Chicken, chopped
1 Stock Chicken Cube
1 Fresh Garlic Clove, crushed
1 Tablespoon Sunflower Oil, for frying
Handful of Parsley, washed and chopped finely 
Black pepper and corriander, to season chicken
100g Your choice of pasta, penne works well
Sprinkle Choice of Cheese to finish 


Method

In a saucepan on a high heat boil some water for the pasta of your choice, when the water starts to boil add the chicken stock cube and dissolve before adding all the pasta

In a frying pan or saucepan add the sunflower oil on a medium to high heat and add chicken. As the chicken starts to brown add the garlic and parsley to coat the chicken. Then season to taste - I always avoid salt as the the stock will have salt in already

Check the pasta is cooked and drain the remaining stock water and dish up starting with the pasta and topped with the parsley chicken, finishing with your choice of cheese topping

This recipes is perfect for all the family, my little girl loved it. This is definitely a recipe I will be keeping in my recipe book for the Summer Season's quick and easy dinners.
