Chilli Beef & Rice Noodles

It seems to be a chore when it comes to healthy eating but it really shouldn't be that difficult. Experimenting with vegetable, spices and herbs with your protein is a great way to keep a balanced diet. I have found that a lot of the time when you make homemade food from scratch preparing is the slowest part but if you get into a routine of cooking healthy and preparing lunches and dinner, being a chore is a thing of the past. So get in the kitchen and enjoy cooking this amazing meal in just 20 minutes. 


I have to admit I am a chicken kind of girl but my husband loves his meat and fish so I tried something different with this and added spicy to make this meal more interesting. 

Wash and cut all the vegetables. Be careful with the chilli's making sure you deseed them with a spoon and not to rub your face as it will burn. I found the best way to wash your hands after preparing chilli's is with cold milk soaking your fingers especially and a little hand wash then rinse with warm water. 


Heat your pan or wok on a medium heat and add coconut oil then lightly fry the garlic and chilli.


Then add the beef steak and mix together to cover the beef, cook for a few minutes depending on how you like your steak cooked.


Add the carrots and peppers and cook for a few minutes.


Add the mange tout and baby corn. Mix all together. Add a few table spoons of soy sauce and cook for a few more minutes.


Meanwhile, in a bowl place half the pack of rice noodles and cover with boiling water. Leave for 3 minutes, until soft.


Then drain the water and add to the pan and mix all the ingredients together.


And VoilĂ  there you have a delicious and healthy Chilli Beef and Rice Noodles. 


Ingredients
(Serves 2)

1 tsp of coconut oil
1 crushed garlic clove
1 green chilli, deseeded and sliced
1 sirloin steak, sliced
1 carrot, thinly sliced
1 green bell pepper, deseeded and sliced
1/2 a pack of mange tout
1/2 pack of baby corn, sliced into quarters
2 tbsp soy sauce
1/2 pack of rice noodles
