Chicken & Vegetable Rice Stir Fry

This is one of my daughters favourite dishes, its quick and simple and guaranteed to be enjoyed by all the family. I found that this delicious recipe was a great way to fit protein into my daughters diet as she loves her fruit and veg but is very fussy when it comes to eating meats. This recipe can be created to personal taste using different meats substituting chicken for either turkey, pork or beef. 



Cook the rice fresh; as it is still known to be unsafe to reheat rice, 150g of long grain rice is perfect to use in this dish. 


You can use either ready cooked meat or left overs or cook from fresh to put in the stir fry making it quick and simple for those days you don't have a lot of time to be standing in the kitchen. 


Finally chop 1 large onion and crush 1 clove of garlic and fry on a medium heat in either olive oil or coconut oil for about 8 minutes until the onions are soft. 


Add 100g of frozen peas and cook for a few minutes until thawed follow by adding 100g of drained tinned sweetcorn.






 Add the shredded cooked chicken and 1 tbsp of light soy sauce and mix all together. 


In a bowl beat 2 large eggs with 2 tbsp of milk. Pour into a medium hot pan with a knob of melted butter and scramble softly until egg is fully cooked. 


 Add the egg to the stir fry mix and give it a good stir and serve while hot.


The perfect meal for little mouths..enjoy!
