Spicy Beef & Rice Noodles



Here is a quick and easy recipe that is a great source of protein, great for a post work out meal and a great one for meal prep for the next day or for later, as you can freeze it too. In my house we love chicken but it is nice when we change things up a bit and use beef, lamb or even turkey. This is a yummy beef recipe that can be cooked to how ever you like your steak cooked and it really is so easy to make. 

So here it is, my Spicy Beef & Rice Noodles recipe...

INGREDIENTS

(Serves 2)

Lucybee Coconut Oil or Sesame Seed Oil 
2 Sirlion Steaks, sliced
1 Garlic Clove, sliced 
1 small Onnion, sliced 
1 Red Chilli Pepper, deseeded & finely sliced 
1 Bell Pepper, deseeded & sliced
1 large Carrot, cut into matchstick size or bigger
A large handful of Tenderstem Broccoli
2 handfuls of Mushrooms, sliced 
1 tsp of Chinese 5-Spice 
1 tsp Soy sauce
2 nests of Rice Noodles of your choice

METHOD

In a large pan or wok, on a medium heat, add a tablespoon of oil and lightly fry the garlic and chill
together for a couple of minutes

Add the onions, peppers, carrots, mushrooms and broccoli and cook for another couple of minutes, then add the steak and cook to desired taste, stirring through every couple of minutes for an even cook

While the meat is cooking boil some water in a pan and add the rice noodles and cook until soft

When the meat is nearly done add the Chinese 5-Spice and Soy Sauce and cook for a further minute

Drain and serve the rice noodles with the meat as you desire and sprinkle with a little coriander and serve with sweet chilli sauce for an extra kick
