Domatesli Ispanaklı Köfte // Spinach & Tomato With Meatballs


This Turkish dish is similar to the one that I would eat when I was a young child and before I made this I hadn't eaten it for many years. So in true Turkish style I threw in all the ingredients I thought would make up the recipe and voila! it was pretty damn close and tasted so scrumptious.

This dish is a tomato based dish with meatballs/köfte and the main ingredient, spinach. This meal is healthy and nutritious for the whole family to enjoy and is best served with some fluffy white rice like Basmati Rice, Greek Yoghurt and some fresh bread. Our favourite is a turkish bread called Cörek.

So here is my recipe for Domatesli Ispanaklı Köfte // Spinach & Tomato With Meatballs...

INGREDIENTS

(Serves 4)

24 Homemade Beef Köfte/Meatballs or shop bought, cook in the oven before hand
2 Garlic Cloves, finely chopped
1 Onion, chopped
1 Red Bell Pepper, chopped
125g washed Spinach, roughly chopped
1 tin chopped Tomatoes
1 tin cold water
1 tbsp Tomato Purée
Himalayan Pink Salt and Black Pepper to season/taste

METHOD

In a large saucepan on a medium heat, add a few tablespoons of olive oil a lightly fry the garlic, onions and pepper until soft and season with a little salt and pepper

Add the tomato purée, tinned tomatoes and the water and stir well

Add the cooked Köfte/meatballs

Add the spinach and stir well

Season with a little more salt and pepper to taste and bring to the boil

Simmer and cook uncovered for around 20-30 minutes until you have reached a creamish consistency (you can just cook for 15-mins if you are in a rush)

Serve in a pasta bowl with the rice and greek yoghurt for that true comfort food feeling but full of goodness...and enjoy!
