Piada Recipes | Crosta & Mollica Review

Piada Fillings

I was recently sent some products from Crosta & Mollica to try and review. These included Crosta & Mollica Classic Piada and Wholemeal Piada. If you know me and read my blog you know just how much I love to try new foods. This was my first time trying a Piada and oh my, they were very delicious indeed. 

Piada is known as the street food of the North East Italy region of Emilia-Romagna. Piada is an Italian flatbread traditionally used to create 'folded sandwiches'. In Italy these are made using White Flour, Lard or Olive oil, salt and water. Costa & Mollica use olive oil to create their thin flatbreads, which give them a soft and authentic Mediterranean aroma. 

Piadas are heated in a hot dry pan for a minute or so on both side then filled with an endless choice of filling, folded (not wrapped) and enjoyed as a light breakfast or lunch. 

I have created some of my own recipes of fillings that I tried with my piada. As they are enjoyed as an Italian cuisine, I decided to personalise my piada fillings with some different ideas...


PIADA FILLING RECIPE 1

Spanish Style Filling

INGREDIENTS (serves 2)

3 tbsp Olive Oil
1 white Onion, sliced
1 yellow Bell Pepper, sliced
110g Spanish Chorizo, sliced or chopped
1tsp Smoked Paprika
8 Baby Plum Tomatoes, chopped or sliced
1 handful Fresh Parsley, chopped

METHOD

In a large pan, heat the olive oil on a medium heat for a couple of minutes and add the onions, peppers, chorizo and smoked paprika and mix well and cook until the chorizo is cooked through and the onions are soft

Add the tomatoes and cook for another few minutes

Meanwhile heat another pan and dry fry the piada for a minute or so and place onto a serving plate

Fill the piada with the chorizo filling and sprinkle on the parsley and serve

 PIADA FILLING RECIPE 2

(Turkish Style) 


INGREDIENTS (serves 2)


Half a packet of Hellim/Halloumi Cheese, sliced
1 small Red Onion, sliced
1 Ripe Avocado
Half a Lime Juice
8 Baby Plum Tomatoes, sliced
1/4 tsp Sumac
Handful of Fresh Parsley
Cracked Black Peppercorn
Himalayan Pink Salt 

METHOD

Sauté the onions in a little olive oil and add the sumac and take off the heat

Grill the hellim/halloumi until it has a light brown top 

Mash the avocado in a bowl with the back of a fork, add the lime juice, sprinkle with black pepper and salt (all to taste) and mix well

Heat the Piada in a hot dry pan for a minute or so and place on to a serving plate and with a spoon spread over avocado like a spread, lay the halloumi on top, followed by the onions and tomatoes and finally the parsley

Fold and serve hot


Crosta & Mollica is widely available in Waitrose, priced at £1.79 which I think is a great price.

I really enjoyed creating these recipes and trying Piada for the first time. These are perfect for the whole family to enjoy and so easy to fill.

Other fillings me and my family enjoyed were cooked chicken slices, cheese, tomato and parsley and also a sweet alternative of Nutella with chopped strawberries and bananas.
