Banana & Pear Muffins


We love fruit in our house, we have fruit snacks all the time. Melis is really into baking at the moment and she asked for some banana cakes, so we decided to make some muffins. We had so much fun making these and they were so easy to make and very tasty. We enjoyed them as a treat with a lovely cup of Roobios tea.

So here we are sharing our lovely recipe on beautybakingbella, a perfect recipe to use with your little ones..

INGREDIENTS

(makes 12 muffins)

1 Banana, chopped small
1 Pear, peeled and chopped
50grams Unsalted Butter, melted
100grams Castor Sugar
175grams Self-Raising Flour
1tsp Baking Powder
100ml Milk
1 Egg
Pinch of Salt

METHOD

Preheat fan oven to 200 degrees

In a muffin tin place 12 empty muffin cases ready to fill

In a microwave safe bowl lightly melt the butter in the microwave until soft and with a spoon lighten the butter and add the castor sugar and combine well

In a separate bowl whisk the egg and slowly add to the butter mixture until it becomes smooth and silky

Sieve in the flour, baking powder and the pinch of salt and fold in with a metal spoon until the mixture is combined well

Add the chopped fruit and the milk and mix well

Using an ice-cream scoop and a teaspoon fill the muffin cases with equal amounts of muffin batter

Place on to the middle shelf in the preheated oven and bake for 15 minutes, until the top of the muffin becomes a lovely light golden colour and the sponge is cooked through (check with a skewer, should come out clean)

Once baked remove tray from the oven and wait a few minutes before placing the muffin cases onto a cooling rack, once cooled dust over with some icing sugar

Serve warm or cold with a pot of your favourite tea or coffee with family or friends or as a lovely afternoon treat..
