Spaghetti & Meatballs Recipe


There is just something about meatballs that makes such a yummy dinner for the kiddies and us grown ups. This is another of my daughters favourites, if she could she would eat this meal every day! 

Here is my simple and quick recipe for the perfect spaghetti and meatballs full of flavour, great for the whole family.

INGREDIENTS

(4 people)

24 Mini Beef Meatballs
2 tbsp Olive oil
1 Red Onions, chopped small
1 Clove Garlic, finely sliced and chopped
2 Bell Peppers, chopped small
Half tsp Dried Oregano 
680g Tomato Passata Sauce 
1 tbsp Tomato Purée
Salt and Pepper to taste

1 Chicken Stock Cube
1 Packet of Quick cook Spaghetti

METHOD

Pre-heat fan oven 180 degrees

On a baking tray bake the meatballs for about 20 minutes

Meanwhile start the sauce, in a large saucepan add the olive oil, on a medium heat, fry the garlic and the onions until soft, then add the peppers and continuing cooking until soft 

Add the passata and tomato purée and season with a little salt and pepper

Add the cooked meatballs and stir well

Add the dried oregano and simmer until sauce is creamy (10-15 minutes)

While the meatball sauce is simmering, in a saucepan of boiling water cook the spaghetti, adding the stock then add the spaghetti and simmer until cooked (follow packet cooking guidelines)

Once the spaghetti is ready, serve on a large dinner plate or pasta bowl. Either add the spaghetti bit by bit to the meatball sauce to mix or place the spaghetti onto the plate and add the sauce on top. 

Sprinkle your choice of grated cheese and serve, enjoy!
