BEAUTYBAKINGBELLA has been going now for nearly three years so I decide to take the next step and invest in a new and professional blog layout and buy my own domain. I have to say I never thought I would even still have this blog let alone buy the domain for it! I'm am very excited and very grateful that I have so many readers that take the time to read my blog otherwise I would never have bothered to do anything to it. However, I'm glad I have because I feel like its a new direction for my blog and it has inspired me to keep posting and writing about the things that interest me.

Blogging has become a great way for me to find some time to myself and actually have grown up thoughts to myself about things that I like as a person and not a mummy like, baking, food and makeup but on the flip side its becoming a great way for me to sit down and reflect on how I get through each day being a mummy to my beautiful babies.

Over the years I've learnt a lot about the wonderful world of blogging and I'm still learning but one thing that I do know and tell myself is not to feel pressure posting for the sake of posting just so there is one every day. As a blogger I want my posts to be filled with thought and feeling- maybe just thought in my food posts making you all hungry :) but what I'm trying to say is blogging should be an enjoyable experience and thats one thing I've learnt over the past few years and if you are struggling to find your feet with blogging that is the one piece of advice I would of given my novice self. 

For anyone looking for a new blog layout check out pip dig they have so many different varieties depending on what type of blog image you want and the best thing is that it was stress free and easy. They even install the template for you free of charge, thanks Phil :) giving you all the support you need to get your blog looking the way you want.

I would also recommend GoDaddy if you are looking to invest in your own domain name. Why not? A very quick and easy process again and all the support you need is available on the website. Within 48 hours I had my dream blog up and running, as easy as that!

I hope this post has inspired anyone out there that is thinking about starting a blog or maybe even thinking about giving up because you've lost your inspiration. Find your passion and interest and just let the rest flow and enjoy!

I love French Toast! This is a perfect brunch idea when you fancy something sweet and healthy at the same time. It is so quick and easy to make and is perfect for the whole family to enjoy.

This meal has to be my all time favourite homemade curry and I'm not ashamed to admit I have this at least once a month! Believe it or not I have never really experienced real Thai food, it is something I hope to do soon. A couple of years ago my little sister made me a Thai Curry and I absolutely loved it and have made it ever since. Over time I have altered the recipe in terms of ingredients but that is the wonders of home cooking you can do what you like with food, especially healthy food, just throw it all in and enjoy!

Here is my recipe for my Thai Green Chicken Curry, but you can add whatever vegetables you like and with every curry I make I have different ingredients depending on what I have in the fridge or fancy, but this recipe is pretty much the basis of a quick and easy Thai Green Chicken Curry.

INGREDIENTS

(2 people)

1 teaspoon of LucyBee Coconut Oil
2-3 Skinless Chicken Breast, diced
1 Garlic clove, finely chopped
1 or 2 Green, Red & Yellow Bell Peppers, chopped or sliced
1 bunch of Spring Onions, roughly chopped
1 Handful of Mange Tout
1 Handful of Baby Corn, chopped
1 Can of Coconut Milk
2 or 3 teaspoons of Thai Green Paste
1 Handful of Coriander, roughly chopped
Half a Lime

METHOD

In a medium/large saucepan heat the coconut oil on a medium heat and fry the garlic for a minute and add the chicken, fry until chicken is cooked.
Add the spring onions and peppers and fry for a few minutes until soft.
Add the mange tout and baby corn and cook for another few minutes.
Add the Thai green paste and the coconut milk, stir altogether and bring to a boil, then simmer and cover.
Cook for about 30-45 Minutes, stirring occasionally to achieve a creamy sauce (you can cook for less time if you are in a rush, still tastes just as nice)
Then add half a squeezed lime juice right before taking the saucepan off the heat and once you have plated up sprinkle over the coriander and serve with some white fluffy rice or a naan bread.

This is one of my daughters favourite dinners, full of vegetables and protein and the added fun with spaghetti this is a winner with the family every time. It is very tempting to buy a ready made bolognese sauce but where is the fun in that when it is healthier to prepare your own.


I have to admit when I cook I tend to just grab a few ingredients of vegetables and meat and mix it together to create my dinners, adding my favourite herbs and spices to make my food more interesting. I'm not anti processed food but if I have a choice I would take a home cooked meal any day and do this everyday for me and my family. I believe that healthy eating and eating everything in moderation is a better way of life than constantly trying different diets, this is a better way to lose weight healthily and maintain a healthy lifestyle and great health.
Wow! I can not believe that my last post was in September! Finding the time to sit and write became quite hard hence why I have been MIA for the past 4 months. The last time I posted I was six months pregnant with my second baby and had posted a few posts on how hard and poorly I had been feeling during my pregnancy. Well, it didn't get better for unfortunately.






















I'm a bit late with this post as this trip was in July but better late than never I suppose. This trip was for our 3rd wedding anniversary we had planned to see Lionel Richie in Concert back in March at the O2 in London but for unseen circumstances we couldn't go, I was devastated. So my lovely husband surprised me and booked tickets to see him again..at Edinburugh castle. So he planned a lovely couple of days away for us to Scotland, organising the transport and hotel..well let's just say he did very well. I've never stayed in such a beautiful hotel and for anyone thinking of visiting Edinburugh then do it! Such a beautiful and friendly place, I would love to go back again. Instead of babbling on here is a gallery of photos of our trip away...
